Whole dried butterfly-pea blossoms (Clitoria ternatea) of a deep indigo-blue, prized for the vivid colour they release into hot water and their pH-driven shift toward purple with acid. They are used for visually striking herbal teas, cocktails, rice dishes and desserts. Available in bulk and for private-label beverage and natural-colour applications.
