Overview
Whole sun-dried pieces of goraka (Garcinia), dark, leathery and intensely sour, traditionally used across Sri Lanka and South India to sour and finish fish and seafood curries in place of tamarind or lime. The robust pieces hold up to long simmering. Supplied in bulk and for private-label spice ranges and food manufacturers.
